Simply Does It – Commodore Chicken

It’s another Simply Does It meal from our Town or Country team with the aim of you making the most of the fully equipped kitchen and the precious time you have in it. What is more we can deliver the ingredients and fill up your fridge – contact us prior to arrival.

Chcicken Rice

This is a very filling and balanced dish. Mixed with protein and at least FOUR of your five a day you will not leave the apartment hungry! Named after our beautiful Southampton serviced apartment all this can be made in under 15 minutes. Here’s the rub:

Ingredients:

x 4 chicken Gaujons (100% chicken breast or just the chicken by itself)

x 1 Avocado 

x 1 egg

x 1 packet of rice (we used Uncle Ben’s Tomato & basil flavour)

x 1 tomato (at room temperature)

Handful of lettuce/salad

Optional: dressing and ground black pepper

Bang on the oven to the required temp for the chicken (about 200c). Place the chicken on a baking tray, place in the oven and set the timer for about 8 minutes. After 8 minutes heat up a pan of water to boiling point and place in the egg (or two).

Set the timer on for another 5 minutes. During this time slice up the tomato and shred the avocado. Place into a bowl and mix it up gently with the lettuce. Serve on a plate and rest. After 5/6 minutes the eggs will be done (doesn’t matter if runny). Peel once cooled and slice up to add to the salad.

Set the timer on another 2 minutes and place the rice into the microwave. Careful when done cos it gets blooming hot when you open it!

By this time the chicken should be done. Serve the rice onto the plate and place the chicken on the top. Crack on the black pepper, get the telly on and enjoy.
